Here's a recipe for smoked chimichurri lion's mane:
Ingredients:
- 1 large lion's mane mushroom, cleaned
- 1/2 cup chopped fresh parsley
- 4 cloves garlic, chopped
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Instructions:
1. Preheat your smoker to 250°F.
2. Cut the lion's mane mushroom into 1-inch thick slices.
3. Place the slices on a smoker rack and smoke for about 30 minutes, or until tender and lightly browned.
4. While the mushroom is smoking, prepare the chimichurri sauce. In a bowl, whisk together the parsley, garlic, olive oil, red wine vinegar, smoked paprika, oregano, salt, and pepper.
5. Once the mushroom is done smoking, remove it from the smoker and place it on a serving platter.
6. Drizzle the chimichurri sauce over the top of the mushroom, making sure to coat each slice evenly.
