VEGAN BOLOGNESE

Here's a recipe for Vegan Bolognese:


Ingredients:

- 1 tbsp olive oil

- 1 onion, finely chopped

- 2 cloves garlic, minced

- 1 carrot, finely chopped

- 1 celery stalk, finely chopped

- 1 red bell pepper, finely chopped

- 1 can diced tomatoes

- 1 cup vegetable broth

- 1 tsp dried oregano

- 1 tsp dried basil

- 1 tsp dried thyme

- Salt and pepper to taste

- 1 package of your favorite vegan ground "meat" or crumbled tofu

- 1 lb spaghetti or your favorite pasta


Instructions:


1. Heat the olive oil in a large pan over medium heat. Add the onion and garlic and cook until the onion is translucent.


2. Add the carrot, celery, and red bell pepper. Cook for about 5 minutes, until the vegetables have softened.


3. Add the canned tomatoes, vegetable broth, oregano, basil, thyme, salt, and pepper. Bring to a simmer and cook for about 10 minutes.


4. Add your vegan ground "meat" or crumbled tofu to the pan and stir to combine. Cook for another 10-15 minutes.


5. While the Bolognese sauce is cooking, cook your pasta according to package instructions.


6. Serve the Bolognese sauce over the cooked pasta and enjoy!
