Ingredients:
- 4 boneless, skinless chicken breasts
- 1 lb fresh green beans, trimmed
- 4 cloves garlic, minced
- 1/4 cup butter
- 2 tbsp olive oil
- 1 lemon, juiced and zested
- Salt and pepper to taste
- 1/4 cup chicken broth
- Fresh parsley, chopped (optional)
Instructions:
1. Season the chicken breasts with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for about 5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.
3. Add the green beans to the same skillet and cook for about 5 minutes, or until they are slightly tender.
4. Add minced garlic and cook for another minute.
5. Add butter to the skillet and melt it.
6. Add chicken broth, lemon juice, and lemon zest to the skillet. Stir well to combine.
7. Add the chicken back to the skillet, spooning some of the lemon garlic butter sauce over it.
8. Cook for another 2-3 minutes, or until the chicken is heated through.
9. Garnish with fresh parsley (optional) and serve hot.
