Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 4 tablespoons unsalted butter, divided
- 4 tablespoons olive oil, divided
- 1/2 cup Marsala wine
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1/4 cup chopped fresh parsley
Instructions:
1. Preheat the oven to 200°F. Season the chicken breasts with salt and pepper, and dredge them in the flour, shaking off any excess.
2. In a large skillet, heat 2 tablespoons of the butter and 2 tablespoons of the olive oil over medium-high heat. Add the chicken breasts and cook until golden brown, about 4-5 minutes per side. Transfer the chicken to a baking dish and keep warm in the oven.
3. In the same skillet, melt the remaining 2 tablespoons of butter with the remaining 2 tablespoons of olive oil. Add the Marsala wine and chicken broth, and simmer until the sauce has reduced by half, about 5-7 minutes.
4. Stir in the heavy cream and continue to simmer until the sauce thickens, about 2-3 minutes. Season with salt and pepper to taste.
5. Remove the chicken from the oven and pour the Marsala sauce over the chicken.
6. Garnish with chopped fresh parsley and serve hot with your choice of side dish, such as pasta or vegetables.
